I read that a banana cream pie has all the ingredients that our bodies consider comfort food.  It is truly a complete food! (Chocolate Rehab pg. 76)
1 baked pie shell
custard
Double this custard recipe if using a deep dish pie pan (more then 3/4 inch sides).
½ cup granulated sugar
2 tablespoons cornstarch
½ teaspoon salt
2 cups milk
Mix sugar, cornstarch and salt in saucepan. Slowly stir in milk. Boil one minute over medium heat, stirring constantly.
2 egg yolks
Remove from heat. Stir half of mixture into egg yolks. Then blend remaining eggs into hot mixture in pan. Boil one minute more, stirring constantly.
2 teaspoons butter
1 teaspoon vanilla
Remove from heat, blend in butter and vanilla. Cool. Add 2-3 drops of yellow food coloring.

Pour custard into pie shell, layering with bananas. Chill 2 hours.
2 to 3 bananas, cut in slices
Top with whipped cream.

Annette is looking her prettiest.  Today she is hosting a bridal shower for Maryann.  Since Annette can only handle one thing at a time, she went with her yellow cotton print, trimmed in rick-rack and accented with an organdy apron in deference to the color of her banana pie.  Now, if she can just remember where she put the bridal gift...
